The restaurant, run by 66-year-old Eritrean immigrant Nisti, was on the verge of collapse, plagued by hygiene issues, a confused menu, and internal family strife.Upon his undercover arrival, Ramsay discovered a kitchen in chaos. Grease, grime, and rotting food were rampant, and a cockroach infestation had taken hold. The once-vibrant establishment was losing thousands of dollars a month, with Nisti pouring her life savings into keeping the doors open.
The heart of the problem, Ramsay found, was a departure from the restaurant’s roots. Nisti’s son, Ephraim, in an attempt to attract a wider audience, had introduced a menu of poorly executed American staples like chicken wings and Philly cheesesteaks. These dishes, Ramsay noted, were “bland” and “rubbery,” a stark contrast to the “delicious” and “authentic” traditional Eritrean dishes that were Nisti’s specialty.
The intervention was not without its challenges. Ephraim was initially resistant to change, attached to the non-traditional menu he had created. It took a heartfelt plea from his sister, Carmen, who had secretly reached out to Ramsay for help, and a series of frank conversations with Ramsay himself to convince the family that a drastic change was necessary.The transformation was nothing short of remarkable. Ramsay’s team deep-cleaned and renovated the entire restaurant, infusing it with a fresh, vibrant aesthetic that still honored its Eritrean heritage with traditional art and seating. The kitchen was reorganized and re-equipped, and the menu was overhauled to focus on Nisti’s celebrated traditional dishes, with a few modern twists.
With a renewed sense of purpose, Dahlak reopened its doors to a warm reception from the community. Customers lauded the revamped space and the revitalized menu. Carmen and Ephraim have taken on more prominent roles in the restaurant’s management, allowing Nisti to step back from the daily grind and connect with her patrons. This story of a family-run restaurant’s revival is a testament to the power of returning to one’s roots and the enduring appeal of authentic, home-cooked food. Dahlak is located in West Philadelphia and is once again ready to welcome diners to experience the rich flavors of Eritrea.
